The Flaming Sage



Glass: large balloon gin glass

50ml Beckett’s gin
10ml benedictine
20ml lime juice
2 large sage leaves
5g fresh cumin
10ml sugar syrup

Method: add all ingredients to a shaker with crushed ice. Shake. Dump into glass and top with further crushed ice.

Garnish: dehydrated lime wheel and sage leaf. Set fire to the leaf with green chartreuse.
